Our Cebuano delicacies are the inasal na baboy or lechon baboy in Tagalog (or roasted pig). A translation is necessary here to give a regional distinction to a common delicacy that is a traditional trait in every Filipino's occasion.
It is a common knowledge that the best lechon still comes from Cebu. Cebuanos seemed to have perfected the recipe (after all Cebu is one big Chinatown!), a feat which puts Cebu’s lechon industry a notch higher than any other lechons in the country.
So what makes Cebu’s lechon different from those of Batangas or La Loma (the lechon capital of the Philippines)?
Crunchy skin and flesh so tender (more so when it is a suckling pig or 'lechon de leche') which absorbs the aromatic taste of various fragrant herbs and spices (lemongrass, anise, onions, garlic, etc.) stuffed in the pig’s belly.
The pig is slowly roasted over a charcoal pit and basted with a dressing that yields brown crunchy crispy skin it produces a crackling sound when munched. Depending on the pig’s size, roasting may take a few hours.
Unlike their regional counterparts, Cebuanos don’t use liver sauce when eating lechon. It is because it has already a flavorful taste, suffice it to dip their lechon in a sauce of vinegar-soy combined with garlic, onions and sometimes chili pepper. It locks in the lechon’s flavor and enhances its aromatic smell.
Cebu’s lechon has gone a long way, from being a mainstay in every buffet table to a pasalubong. In fact, the party is not complete without the lechon.
Today, Cebu’s lechons are delivered whole to other parts of the country. Depending on the size, Cebu’s lechons are priced from $290 to $340. A pound costs $11.
Cebu lechon orders are increasing. If you have to have one today, you should have placed an order at least 5 days in advance to reserve the pig, says one lechon maker.
The best lechon in Cebu could only come from Talisay, Cebu. But, now it is already available here in our locality here in Los Angeles, California, U.S.A. serving the Filipino and American.
